RECIPE OF THE MONTH- DECEMBER

Chewy Molasses Spelt Cookies

Vegan, nut-free
        YIELD 1 DOZEN COOKIES PREP TIME 15 MINUTES COOK TIME 12 MINUTES Ingredients:
  • 1/2 tablespoon ground flax mixed with 2 tablespoons water
  • 1/4 cup vegan butter
  • 1/4 cup natural cane sugar
  • 2 tablespoons blackstrap molasses
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon pure vanilla extract
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine grain sea salt
  • 1/4 teaspoon ground cloves
  • 1 & 1/4 cups light spelt flour
  • 1/4 cup diced candied ginger (optional)
  • 2-3 tablespoons sugar, for rolling (optional)

How long have you been a member of Me Fitness and what keeps you coming back?

I have been coming to Me Fitness since Spring 2013.  The fun and challenging fitness classes keep me motivated and excited to return often. Booty Luv fitness class originally inspired my membership; I have loved to explore other classes like Tough Ballerina and Gravity.
