ME Fitness Recipe of the Month: November

For our recipe this month, ME Fitness Nutritionist, Krista Barlow, shares a great recipe to satisfy those sweet cravings. What a simple, healthy way to treat yourself!

These little gems are insanely delicious. They are simple to make and nutrient dense nuggets that keep your sweet tooth fully satisfied, yet won’t sabotage your health goals.

I like to roll them in shredded coconut to get an extra hint of fiber and healthy fats, but you can enjoy with your without!

 

Chocolate Insanity Balls

Makes 10 balls

Ingredients

  • 1 cup of raw pumpkin seeds
  • 1 cup of pitted dates, soaked for 15 minutes or more
  • 2 tablespoon of raw cacao powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon powder
  • 1 teaspoon of water

Directions

Combine all ingredients in a high speed blender. You may need a chocolate insanity ballslittle more water depending on the consistency of the dough. Add 1 teaspoon more if needed.

Roll the dough into balls and place on a tray. Put the tray in the refrigerator to set for one hour.
