Green Veggie and Hummus bowl
March makes me think green. It’s the month for St. Patrick’s Day and Spring Cleaning as we start to prepare for the (hopefully) warmer months that are around the corner. I’m excited to share with you all my go to salad right now. This is a delicious, easy to make clean, green recipe.
1 hard boiled egg
¼ bunch kale, thinly sliced
½ cup shredded brussels sprouts
½ bunch of broccolini (or broccoli works, too) cut into long thin strips
extra-virgin olive oil

2 tablespoons Extra Virgin Olive Oil
½ tablespoon Apple Cider Vinegar
1 tablespoon Dijon Mustard
½ teaspoon of Garlic or garlic powder
Sprinkle of green onions
Dash of maple syrup
Salt and Pepper to taste
SHAKE IT UP!
Heat olive oil in a pan. Add Brussel sprouts, broccolini, and kale. Saute until heated through (I like mine al dente for that natural veggie crunch). Put a generous dollop of hummus into a bowl. Add all greens on top of hummus. Add hardboiled egg, avocado, sunflower seeds and drizzle with dressing below!
I could honestly have this recipe any meal of the day! It helps me feel revived and healthy as all the nutrients in this bowl keep me feeling full with a happy belly!
